Quinoa Pizza Bites

Healthy weekend snack recipe
Ingredients
  • 2 cups cooked quinoa
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped pepperoni slices (3.5 oz)
  • 1/2 tsp seasoning salt
  • 2 tsp dried basil
  • 1 tsp paprika
  • 1 tsp dried crushed oregano
  • garlic, onion powder to taste
  • pizza sauce for dipping
How to Prepare
  • Preheat oven 350 degrees
  • Mix together all ingredients except pizza sauce, in a medium size bowl.
  • Into a greased mini muffin tin fill each cup to the top with the mixture and press down to compact.
  • Bake for 15-20 minutes until golden brown
