Quinoa and Cheese

Ingredients
  • 1 cup Quinoa
  • 1/4 teaspoon turmeric (optional)
  • 1/4 teaspoon black pepper
  • 6 ounces fat-free plain Greek Yogurt
  • 1 cup shredded reduced-fat sharp cheddar
  • 2 teaspoon Dijon mustard
How to Prepare
  1. In a large saucepan, prepare quinoa according to package directions.
  2. Just before the quinoa has finished cooking, stir in the turmeric and pepper, and cover.
  3. Remove from heat and immediately stir in the remaining ingredients.

Serve Immediately
