Winter Slow Cooker Cauliflower Soup™

Ingredients
  • 6 Cups of Cauliflower Florets
  • 1 Cup Carrot, diced
  • 1 Cup Onion, diced
  • 3 Celery Stalks, diced
  • 2 Garlic Cloves, minced
  • 4 Cup Chicken or Vegetable Stock
  • 1/4 Cup all purpose flour (skip for low card or GF)
  • 1 1/2 canned Nonfat Evaporated Milk
  • 1/2 Cup Skim Milk
  • Salt and Pepper
  • 1.5 Cup Low Fat Shredded Cheddar Cheese
How to Prepare
  1. Add the cauliflower, carrots, celery, garlic and broth to a crockpot.
  2. Cook on LOW for 4 hours or until veggies are soft.
  3. Stir together the flour, evaporated milk and skim milk.
  4. Add to slow cooker and turn it up to HIGH for 1 hour.
  5. This will thicken the soup
  6. Season the soup with salt and pepper to taste.
  7. Use an immersion blender or blend in batches until smooth.
  8. Stir in the cheese until it melts completely.
