Low Fat Peanut Butter S’mores™

These kid and waistline friendly treats call for reduced fat peanut butter and semisweet chocolate chips.

Ingredients
  • 1 cup packed brown sugar
  • 1/2 cup reduced-fat peanut butter
  • 2 tablespoons butter, softened
  • 1/2 teaspoon vanilla extract
  • 2 egg whites
  • 1 1/2 self rising flour
  • cooking spray
  • 7 ounces marshmallow creme
  • 1/4 cup peanuts, roasted and chopped
  • 2/3 cup semisweet chocolate chips
  • graham crackers
How to Prepare
  1. Preheat oven to 350 degrees
  2. Combine first five ingredients in a bowl and beat with a mixer on medium speed until combined.
  3. Spoon flour into dry measuring cups, level with a knife and stir into mixture
  4. Press mixture into a 9×12-inch pan coated with cooking spray
  5. Spread marshmallow creme over dough and sprinkle with peanuts and chocolate chips.
  6. Bake for 20-22 minutes or until lightly browned
  7. Cool completely
